I think that Mary's comment that she expects to see seasonal produce is a little naive. The series was shot in one season (summer I think) so to expect all the dishes to be summer based is not realistic as it is "Britains Best Dish" and not "Britains Best Summer Dish".
It is interesting to see that they believe that if they haven't heard of it it must be "amateur". As far as Monkfish (starters) not being "indigenous" whereas shrimp and trout are, what was she on? I look forward to more classical "opening mouth before engaging brain" statements over the week.
