    Anyone Have Sponge Cake Recipes

    I did have a great Prue Leith recipe but i've lost it!! Any ideas everyone...please!?:D

    Hello,

    One of the most simple ways to make a sponge iS is what I call the the all in one sponge.

     

    3 eggs.........weigh your eggs in the shell.

    Wat ever your eggs weigh use that weight of .....

    Self Raising Flour

    Caster Sugar

    Butter/Marg

    preheat oven to 175c........gas 5 and drop to 165 if your oven has a fan.

    Cream the butter and sugar until fluffy and white.

    Slowly add the beaten eggs....if it starts to curdle add alittle flour

    lastly sieve in the flour and carefully fold in.

    Spread into a suitable size tin and bake until well risen and springing back.

    Any thing can be added to the mix nuts, cherries, sultanans etc

    This is the only Prue Leith recipe I could find I'm afraid!
