    Rustie Lee Recipe

    Can anyone give me, or tell where I can find the recipe to a Caribbean Christmas Rum cake that Rustie Lee did once on GMTV in the 1980's. It contained a whole bottle of rum as I recall and the family loved it but we've lost the recipe.

    Hello, I have been searching for the Rustie Lee Caribbean Xmas cake recipe and came across your reply to another lady. I wonder if you could send it to me. I haven't made a xmas cake in years and remembered Rustie making this all those years ago with lots of rum and crushed pineapple (can you still buy it) Its funny how things stick in your mind, what a truly amazing character. Loved her cooking on TV. I'm going to buy her book  but want to get on with the cake as I've left it a bit late.  Merry Xmas. Anita

    Hi Avrell,  I wonder if I could impose upon you to supply me with Rustie Lee's Rum Baba recipe please. I put mine away somewhere for safe keeping and it's disappeared!! Thank you, Airball.

    Rustie has a new (2007) book out, ''A taste of the Caribbean'' and the recipe is in there. It's even featured on a dvd that comes with the book. Try Amazon. Or try the publisher, HandE publishing.

    I've only just found these posts, but would love this recipe if it's the one with all the rum in it. I used to make it when she had her show on, but lost the receipe ages ago, would love a copy if you have it.

    Hi, have just seen your thread about Rusty Lees' Christmas Cake receipe.

    Could you please send it to me as I have been looking for this everywhere.

    I know she has a new book due out in December but fear this will be far too late to make this cake.Big Smile

    Hi Bones, The recipe is as follows:

    Rustie Lee’s Christmas Cake

     

     

    1 lb Sultanas

    2lb Mixed Fruit

    8 oz Raisins

    8 oz Currants

    1 lb Butter

    1lb Soft Brown Sugar

    10 Eggs

    1 lb Plain Flour

    4 oz Ground Almonds

    4 oz Chopped Cherries

    1 Dessertspoon Cinnamon

    1 Dessertspoon Nutmeg

    1 floz Vanilla Essence

    1 floz Rum Flavour

    1 Bottle Ruby Wine

    ½ Bottle Rum

    1 tablespoon caramel colour or treacle

     

    Method

     

    1.         Steam all fruit together in ruby wine for 15 minutes.  Let it cool.

    2.         Cream butter and sugar together until fluffy, then gradually add eggs and caramel colour (or treacle).

    3.         Mix ground almonds to flour, adding cinnamon and nutmeg.

    4.         Add dry ingredients to creamed butter and fold in.

    5.         Mix fruit into mixture, adding vanilla and rum flavour.

    6.         Place in well-lined, large tin and bake for 3 hours at 325F/175C.

    7.         Take from oven, allow to cool.  Pour half bottle of rum over cake allowing it to soak in.

    8.         To keep cake moist wrap in silver foil and keep until ready for decoration.
